I watched this video (http://www.youtube.com/watch?v=h6qVm9rJR6I). In which the guy gets sensor and motor values from the robot, as he is controlling with the joystick, to then transfer to an autonomous code. I was wondering if there was some sort of function or setting that would allow for me to do the same.

That person probably wrote his own code for that. Really, you could write your own code for that: Every loop, simply record each motor's power value and the current time into a text file, in such a way that it's either code or can be read easily with code.
